To make Mama and Sue's Microwave Divinity, pour 1/2 cup water, 1/2 cup light corn syrup, 2 1/4 cup sugar and 1/4 teaspoon salt into a microwave-safe bowl. Microwave the mixture on high for about four minutes, then remove and stir. Heat on high for another nine minutes. In the meantime, place 2 egg whites into a mixing bowl, and beat until stiff peaks form.
Remove the syrup mixture from the microwave, and slowly add the mixture to the egg whites, beating constantly. Continue mixing and add 1 1/2 teaspoons vanilla extract. Continue mixing for four to five minutes or until the divinity becomes less shiny and more firm. Drop by spoonfuls onto a sheet of wax paper. Quickly form the spoonfuls into more uniform balls. Top each ball with a pecan, if desired. Once the divinity has cooled completely, transfer it to an airtight container, and store at room temperature.
