One method for using bulgur wheat as a breakfast cereal is to cook it ahead of time and mix it with fruit and seasoning. Other recipes call for cooking bulgur right before serving it.
A standard method for preparing bulgur is to combine two parts water to one part of the wheat. Bring this mixture to a boil, and cover the pot. Reduce the heat, and simmer for 10 minutes. Store in the refrigerator.
For a breakfast cereal mix, combine cooked bulgur with Greek yogurt and honey. Season with cinnamon, brown sugar and toasted walnuts. Add banana slices, apple chunks or another fruit.
Another option is to submerge one part bulgur in two parts boiling water, cover and leave overnight. In the morning, cook the wheat over medium heat in 1 of cup milk, stirring often. Cook until the bulgur is the consistency of porridge. Add flavorings, such as maple syrup, nuts, butter and fruit.
Alternatively, soak 1 cup of uncooked bulgur overnight in 1 1/2 cups of milk. Place 1 serving of the soaked grains in a bowl, and microwave to heat. Add peanut butter, raspberries, yogurt and nuts.
It's possible to cook the bulgur in milk without soaking. Combine 1 cup of milk with 1/2 cup of medium-grind bulgur in a saucepan. Add raisins, salt and 1 cup of water. Bring to a boil, and then reduce to a simmer. Cook, stirring occasionally, for 10 to 15 minutes. Season with brown sugar before serving.
