Some good recipes for a large crowd include sausage mozzarella supper and hot cocoa. To make sausage mozzarella supper, preheat the oven to 350 degrees Fahrenheit. Add 12 pounds of dry rigatoni pasta to boiling, salted water. Cook the pasta until it is just shy of al dente, and then drain it.
Cook 20 pounds of crumbled Italian sausage until caramelized on the outside and brown in the middle. Drain away any excess grease. In a large stockpot, combine the sausage with 3 gallons of spaghetti sauce, 4 chopped large onions, 6 minced cloves of garlic, 16 cups of sliced fresh crimini mushrooms and 1 1/2 quarts of tomato juice. Add 1 tablespoon each of dried oregano, basil, parsley and fresh ground black pepper. Season the sauce with 2 tablespoons of kosher salt.
Fill a couple of large baking pans 1/3 full with the cooked pasta, and pour half of the tomato sauce over them, dividing the sauce equally. Top the pasta and sauce with 5 pounds of sliced mozzarella cheese, and then add another layer of pasta and sauce to each pan. Top the dishes with 8 pounds of shredded mozzarella cheese, cover the pans with foil and bake them for one hour. Remove the foil and bake for another 15 minutes or until bubbly and golden brown.
To make the hot cocoa, add 3/4 cup of cocoa powder, 1/2 teaspoon of salt and 3/4 cup of sugar to a saucepan. Add 1 quart of warm water, and stir the ingredients over low heat for eight to 10 minutes. Mix in 2 quarts of milk, and heat the hot cocoa until it is scalding.
