Two egg-free recipes for meatloaf are Can You Stay for Dinner's honey barbecue meatloaf and Emeril's turkey meatloaf. The honey barbecue meatloaf recipe uses traditional ground beef and breadcrumbs, while Emeril's recipe uses turkey and oats for a lighter alternative to the classic.
To make honey barbecue meatloaf, mix 1 pound of lean ground beef, 2/3 cup of breadcrumbs, 1/4 cup of barbecue sauce, 2 tablespoons of Worcestershire sauce and 1 tablespoon of spicy brown or Dijon mustard. Also add 1 tablespoon of honey, 1 teaspoon of salt and 1 teaspoon of ground black pepper. Mold the meat into a thick loaf shape in an oiled baking pan. To make the honey barbecue sauce, mix 1/4 cup of barbecue sauce, 1 tablespoon of honey and 2 teaspoons of Worcestershire sauce. Spread the sauce over the meatloaf, and bake at 350 degrees Fahrenheit for 45 minutes.
To make the turkey meatloaf, first fry 4 ounces of chopped turkey bacon until almost crisp, and then add 1 cup of chopped yellow onion, 3/4 cup of green bell pepper, salt and pepper, and cook for about three minutes. Add 1 minced garlic clove and continue cooking for one minute, and then pour the mixture into a large bowl and add 3/4 cup of rolled oats, 1 cup of evaporated milk, 1 1/2 pounds of ground turkey and 2 tablespoons of chili sauce or ketchup. Form the mixture into a loaf pan, and pour 1 cup of chili sauce on top. Cook the loaf for about one hour and 10 minutes.
