The basic buttercream recipe uses 6 sticks of unsalted butter, 9 cups of confectioner's sugar and 1 1/2 teaspoons of pure vanilla extract to make 6 cups of frosting, enough to coat one 8-inch layer cake. Beat the butter and 3 cups of sugar with a mixer on medium speed until combined. Reduce the mixer speed to medium low, and add the remaining sugar 1 cup at a time while continuously mixing. Increase the speed to medium-high, add the vanilla, and beat until the frosting is pale and fluffy, which takes about three minutes.
The chocolate frosting uses 12 ounces softened cream cheese, 1 1/2 sticks softened unsalted butter, 4 1/2 cups confectioners' sugar, 1/2 cup unsweetened cocoa powder and salt. It also requires 18 ounces of melted and slightly cooled bittersweet chocolate and 1 1/2 cups creme fraiche or sour cream. First, beat the cream cheese and butter with a mixer on medium speed until pale and fluffy, then gradually sift and add the sugar, cocoa powder and salt.
