For a good chicken marinade, combine the juice from one large lemon, olive oil, lemon zest and fresh herbs and spices such as garlic, parsley, basil and dill. You can also include other fresh herbs, such as cilantro and oregano, along with a dash of salt and pepper.
Combine 1/2 cup of olive oil with the juice of one lemon. Zest the lemon into the marinade, avoiding the white part. Crush three cloves of garlic with the side of a cleaver or a plate, and add them to the marinade. Chop up enough fresh parsley to make 1/4 cup, excluding the stems. Chop up enough fresh herbs to make 1/4 a cup, either cilantro, basil, dill, oregano or any combination of these four. Add the herbs to the marinade. Finally, add a dash of salt and ground fresh pepper. Add a pinch of fresh red pepper flakes to increase the heat.
