To make the Epicurious recipe, combine 1/2 cup of extra virgin olive oil, 1/4 cup of balsamic vinegar, 1/4 cup of dry red wine and 1 tablespoon of ground mustard. Add 2 cloves of minced garlic, 1 tablespoon of chopped fresh rosemary, 1/4 tablespoon of fresh ground pepper and 1/4 tablespoon of kosher salt. Whisk the ingredients together. Put the filet mignon and ingredients into a resealable plastic bag, and refrigerate it for at least two hours. Remove the bag from the refrigerator, and allow the steaks to come to room temperature before cooking them.
The Omaha Steaks recipe requires 1/4 cup of olive oil, 3 tablespoons of canned chipotle chilies in adobo sauce, 2 freshly squeezed limes and 1 tablespoon of honey. Also add 1 tablespoon of grilled and chopped garlic and 1/4 cup of fresh chopped cilantro leaves. Puree the ingredients in a blender. Transfer the ingredients and steaks into a glass baking dish.
