To prepare the pulled pork, chop 1 onion, and layer the pieces inside a slow cooker. Discard the skin and excess fat from a 3-pound boneless pork shoulder, and position the pork on top of the onions. Pour in 1/2 cup of chicken broth, and cover the slow cooker. Cook the pork on the low setting for approximately eight hours. Allow the meat to cool before shredding it and taking out any fat and gristle. Put the shredded pork into the slow cooker again, and mix in 2 cups of barbecue sauce, 2 tablespoons each of mustard and honey, and 1 tablespoon of soy sauce. Add salt and pepper to taste. Cook the pork for another hour on the low setting.
To make the pizza pasta salad, boil 1 pound of short pasta until it is tender but still firm to the bite. Drain off the water and allow the pasta to cool. Combine the pasta with 1/4 cup of extra-virgin olive oil and 1/3 cup of rice vinegar in a large bowl. Mix in 1/2 cup of chopped, oil-packed, sun-dried tomatoes, 3/4 cup of sliced marinated artichoke hearts, 8 ounces of halved bocconcini balls and 4 ounces of diced pepperoni. Incorporate 1/2 cup of shredded fresh basil and 2 tablespoons of chopped fresh oregano. Add salt and pepper to taste.
