One good Macedonian recipe is Pastrmajlija, or Macedonian pizza, an oval-shaped pizza with pork meat cubes spread across the center of the dough and an egg wash or fried eggs on top. To make a Pastrmajlija recipe for four, combine 1 1/2 cups of flour, 1 teaspoon of instant yeast and 1/2 teaspoon of salt in a bowl, and mix well. Add 1/2 cup of lukewarm water, and mix thoroughly until soft dough is formed.
Place the dough onto a floured surface, and knead it briefly into a ball. Transfer the dough into a large, lightly oiled bowl, and roll the ball against the walls of the bowl to cover it in oil. Cover the bowl with a cloth, and let it sit in a warm room for half an hour. Preheat the oven to 425 degrees Fahrenheit.
Place the dough on a floured surface, and knead briefly. Roll the dough into a 1/4-inch-thick oval shape, grease the dough with 2 tablespoons of all-vegetable shortening, and transfer the dough to a baking sheet. Season 1 cup of cubed pork chops with cayenne pepper, salt and black pepper, and place the meat in the center of the dough, leaving a 2-inch border. Spread 2 tablespoons of all-vegetable shortening across the meat, and fold the edges of the dough, making a 1-inch border.
Bake the ingredients for 15 minutes. Break and whisk an egg. Once the meat is done, pour the egg over the meat, and spread some of it on the borders of the crust. Bake for another five to seven minutes, and let the ingredients cool on a wire rack.
