You can put together a good lemon lush dessert quickly with a few simple ingredients. It is an excellent, colorful and rich dessert for the spring or summer. To dress up the dessert, add flavorful toppings, such as pecans.
To make a lemon lush dessert, mix 1/2 cup of melted butter and 1 cup of flour thoroughly, and flatten the dough on the bottom of a 2-inch-deep baking dish. Bake at 350 degrees for 20 minutes until the crust is golden brown. Mix 2 cups of powdered sugar, two 8-ounce packages of softened cream cheese and 2 cups of Cool Whip thoroughly until they are smooth. Spread the mixture on the baked crust. Next, mix two 3 1/2-ounce packages of instant lemon pudding and 3 cups of milk thoroughly, and spread this mixture over the cream-cheese layer. Chill before serving.
For a variation of this desert, use regular lemon pudding and not the instant variety, and add egg yolks to the pudding mixture. This gives the dessert a richer flavor. In a sauce pan, heat 1/2 cup of water, and mix in two egg yolks and two packets of lemon pudding mix. Let the mixture cool for 30 minutes before spreading it over the cream cheese layer, as above. Add another layer of Cool Whip as a topping, garnishing with crushed pecans and chilling before serving.
