Nestlé offers a good lemon bread recipe with a rating of 4.7 stars out of 5 stars. To make it, gather flour, sugar, baking powder, salt and eggs. Also have evaporated milk, olive oil, grated lemon peel and a lemon on hand.
Preheat the oven to 350 degrees Fahrenheit, and then grease and flour an 8-inch-by-4-inch baking dish. Take 1 1/2 cups of flour, 1 cup of sugar, 1 teaspoon of baking powder and 1/2 teaspoon of salt, and mix in a large bowl. In another bowl, beat 2 large eggs, 1 5-ounce can of evaporated milk, 1/3 cup of olive oil and 1 1/2 teaspoons of lemon zest. Pour the wet ingredients into the dry ones, and then stir together before pouring the batter into the baking dish.
Bake the lemon bread for about 60 minutes, until a wooden skewer comes out clean. While the bread is baking, make lemon syrup by combining 1/3 cup sugar and 1/4 cup of fresh lemon juice. Cook over medium-low heat until a light syrup has formed. After removing the bread from the oven, poke several holes in the bread with a skewer, and then pour the syrup over the bread. Cool the bread for about 15 minutes, and then run a knife around the edge. Cool the bread on a cooling rack, and serve cool.
