A good kosher recipe is for banana crumb muffins. The recipe use ingredients such as brown sugar, baking soda, butter, salt and cinnamon, and it includes a crumb topping. The muffins take 15 minutes to prepare and 20 minutes to cook, and they yield 10 servings.
To make the muffins, mix together 1 1/2 cups of flour, 1 teaspoon of baking soda, 1 teaspoon of baking powder and 1/2 teaspoon of salt in a large bowl. In another bowl, beat together 3 mashed bananas, 3/4 cup of white sugar, 1 lightly beaten egg and 1/3 cup of melted butter. Stir the banana mixture into the flour mixture until the flour mixture is gently moistened. Spoon the batter into 10 lightly greased muffin cups or muffin cups lined with paper.
In a small bowl, mix together 1/3 cup of packed brown sugar, 2 tablespoons of flour and 1/8 teaspoon of ground cinnamon. Cut in 1 tablespoon of butter until the mixture looks like cornmeal. Sprinkle the crumb topping over the muffins.
Bake the muffins in an oven preheated to 375 degrees Fahrenheit for 18 to 20 minutes, or until a toothpick inserted into the middle of a muffin comes out without batter on it.
