Kefir spelt pizza dough and organic kefir with blood orange and dark chocolate are two good kefir recipes. The first recipe is slightly more complicated than the second one.
To make kefir spelt pizza dough, combine 2 cups of wholemeal spelt flour, 3/4 cup of daily milk kefir, and a pinch of salt in a bowl. Knead the mixture to form a dough. Once the dough is springy, put a tea towel over the bowl and let it sit for about five hours in a warm spot.
Break the dough into three pieces, roll each piece into a pizza base shape on a floured surface, and add pizza toppings of your choice. Preheat your oven to 400 degrees Fahrenheit, and put your pizza bases into it. Cook to your liking.
For the kefir with blood orange and dark chocolate recipe, pour 1 cup of kefir milk into a small bowl. Zest a whole blood orange, and put the zest aside. Peel the blood orange, cut it into 8 pieces and put the pieces into the bowl. Grate a few squares of dark chocolate over the bowl, and add the orange zest you put aside. Add a few mint leaves if desired.
Including the pith of the orange increases the bioflavonoid content of the dish. Bioflavonoids increase vitamin C absorption.
