Sweet potato pudding cake is a dessert spin on the traditional Jamaican sweet potatoes. Start this recipe by soaking 1 cup of raisins in 2 tablespoons of rum. Season 1 cup of whole-wheat pastry flour with 1/2 teaspoon of freshly grated nutmeg and 1/2 teaspoon of salt in a separate bowl. Cook, peel, and mash 1 large sweet potato, then beat in 3 eggs, 1 14-ounce can of light coconut milk, 1 cup of light brown sugar and 2 tablespoons of melted butter. Stir in the flour mixture and raisins, and pour into a springform pan. Mix 2 tablespoons of brown sugar, 1/8 teaspoon of ground cinnamon and 1/2 cup of unsweetened of shredded coconut, and drizzle over the cake batter. Bake at 350 degrees Fahrenheit for 60 to 75 minutes.
To make grilled sweet potatoes, combine 3 tablespoons of brown sugar, 1 tablespoon of softened butter, 1 teaspoon of ground ginger, 1 teaspoon of dark molasses and 1 teaspoon of pineapple juice. Stir in 1/4 teaspoon of almond extract and 1 tablespoon of chopped cilantro. Brush 1 tablespoon of melted butter over 1 1/2 pounds of sliced sweet potatoes, and grill. Serve with the brown sugar sauce.
