Rocco DiSpirito's biscotti is a good recipe that is also easy to make. It has received many positive reviews on the Food Network website, and takes a little over an hour to prepare.
Begin by beating together 1/2 cup of vegetable oil, 3 eggs, 1 cup of sugar and 1 tablespoon of anise extract or 3 drops of anise oil in a large bowl. In another bowl, combine 3 1/4 cups of flour and 1 tablespoon of baking powder. Stir the dry ingredients into the egg mixture to form a heavy dough. Divide the dough into 2 portions and form each one into a roll as long as a cookie sheet. Place each roll onto a cookie sheet that has been greased or lined with parchment paper.
Press the rolls down until they are approximately 1/2 inch thick. Bake the rolls at 375 degrees Fahrenheit for 25 to 30 minutes, or until they are golden brown. You may need to bake each roll separately if there is not adequate space for two baking sheets in the oven. Remove the sheets and place the rolls on a wire rack. When they are cool enough to handle, slice the rolls crosswise into 1/2-inch slices. Place the slices back onto the baking sheets, cut side up, and bake them for another six to 10 minutes on each side until they are lightly toasted.
