Cheesy Hash Brown Casserole
Ree Drummond is a host of the daytime Food Network television show, "The Pioneer Woman," and the recipe shown here was featured in the episode entitled "Cowboy Lunch." Being a native Oklahoman, most of Drummond's recipes have strong Southern cooking influences.

- 4 pounds diced frozen hash brown potatoes
- 2 cups grated Monterey Jack cheese
- 2 cups grated sharp Cheddar cheese
- 2 jalapenos, finely diced
- 2 green chiles, diced
- 1 poblano chile, diced
- 8 slices bacon, fried and chopped
- 2 tablespoons butter
- salt and ground pepper
- Saute onions and chiles
- Fry the hash browns
Preheat the oven to 375 degrees F. Heat the butter in a large skillet and then saute the onions, jalapeño, poblano and green chiles until brown or almost blackened.
Stir in the frozen hash browns into the onion and chile mix. Add salt and pepper and toss.
Butter a baking dish and tip the hash brown mix into it. Top it with cheese and bacon, and then bake for approximately 30 minutes or until hot and bubbly.
