To prepare the tilapia dish, vigorously stir 1/4 cup of canned tomato sauce with 2 tablespoons each of mango nectar, ketchup, cider vinegar and brown sugar in a bowl to make a sauce. Mix in 1 teaspoon of molasses and 1/2 teaspoon of garlic powder. Add 1/4 cup each of diced tomato and diced mango. Marinate 2 tilapia fillets in the sauce for 30 minutes.
Warm up a lightly greased skillet over medium heat, and cook the tilapia and sauce in the skillet. When the sauce starts to bubble, cover the skillet, and let the mixture simmer for five minutes or until the fish is just cooked. Serve the tilapia with the sauce and a sprinkling of 1 tablespoon of chopped cilantro.
To make a s'mores sandwich, snap a 4-piece sheet of low-fat honey graham crackers into 2 squares. Combine 1/4 cup of thawed frozen fat-free whipped topping with 8 miniature marshmallows and 1 teaspoon of miniature semisweet chocolate chips. Spread the mixture onto one of the graham cracker squares, and gently press the other graham cracker square on top of it. Place the sandwich in the freezer for one hour or until the filling is frozen.
