To make a homemade version of Miracle Whip, emulsify egg yolk and canola oil then add white vinegar, sugar and lemon juice. Dry mustard, salt, paprika and garlic powder are added for extra flavor.
Start by whisking 1 egg yolk for 15 seconds. Use a small bowl to mix 5 teaspoons of white vinegar, 4 teaspoons of granulated sugar, 1/4 teaspoon of salt and a 1/4 teaspoon of lemon juice. Whisk half of this mixture into the egg yolk.
Pour 1 cup of canola oil into a container with a spout. Drizzle the oil into the egg yolk mixture, whisking with the free hand. When half of the oil is gone mix in the rest of the vinegar solution and add 1/4 teaspoon of dry mustard with a pinch of paprika and garlic powder. Whisk in the remaining oil and then refrigerate the result in a sealed jar.
