One good homemade sauce for chicken tacos is creamy salsa. A homemade sauce for fish tacos is chipotle tartar sauce. For an all-purpose sauce, mix together cumin, oregano, ketchup, cocoa, salt and pepper. Add in chili powder, garlic salt and red crushed chilis for spice.
To make homemade taco sauce, mix 1/2 cup of ketchup with 1/4 teaspoon of chili powder and 1/4 teaspoon of cumin. Add 1/4 teaspoon of cocoa, and equal parts salt and pepper to the ketchup mix. Stir in 1/4 teaspoon of red crushed chilis, oregano and garlic salt to finish the sauce. Use this on tacos or as a dip.
To make the chipotle tartar sauce, chop two cloves of garlic and two chipotles in adobo sauce with the seeds removed. Put these ingredients in a bowl, and then add 3/4 cup of mayonnaise. Chop up one scallion fully, including the green stalk. Add this to the bowl along with 1 tablespoon of lime juice and salt, to taste.
Make the creamy salsa sauce using four chopped tomatoes, 1/2 cup of cilantro and 1/4 cup of chopped red onion. Put these in a bowl and add one seeded, chopped jalapeno and one chopped scallion. Combine these with 1 cup of sour cream, 1/2 teaspoon of garlic powder and 2 teaspoons of lime juice. Chill the sauce in a refrigerator at least 1 hour before serving it.
