To make Homemade Salami from beef, season 2 pounds of ground beef with 1/4 teaspoon each of garlic powder and onion powder, 2 teaspoons each of red pepper flakes and liquid smoke flavoring, 2 tablespoons of sugar-based curing mixture, 1 tablespoon of coarsely ground black pepper and 1/2 teaspoon of mustard powder. Shape the beef into a log, and wrap it into foil. After two hours, combine the wine minus the garlic, 5 ounces of salt or 1 ounce of salt for every 2 pounds of meat and ground pepper to taste with the meat, then stuff it in large pork casing. Hang the meat in a dry area below 39 degrees Fahrenheit, and turn it daily for a month. Once the salami hardens, it's cured and ready to eat.
