When making homemade apple cider, you need about 10 apples, 1 cup of sugar, 4 tablespoons of cinnamon and 4 tablespoons of allspice. This recipe make approximately a half gallon of cider and takes about three hours to cook.
When making the apple cider, start by cutting the apples into quarters and adding them to a large pot. Add enough water to cover them. Next, add the sugar. Place cinnamon and allspice in a cheese cloth, and tie up tightly. Add this to the pot as well.
Boil the apples, sugar and spices over high heat for one hour uncovered. After this, place the lid on the pot, and continue to simmer over low heat for two more hours. Next, remove from heat, and let the cider cool.
Remove the spices, and mash up the apples so the consistency is pulp-like. After this, pour the mixture into a strainer over a large bowl to drain the juice. To ensure all the juices have been drained away, put the remaining apple pulp into a doubled-up cheese cloth. Proceed to squeeze it over the bowl until you have drained all the juice.
Store the cider in an airtight container in the refrigerator for up to a week. You can also store it in the freezer for a longer period of time. When ready to serve, simply reheat the cider in the microwave or on the stove. Serve with whipped topping and a dusting of cinnamon or marshmallows.
