Tennessee meatloaf and macaroni and cheese are two quality home-cooked family recipes. Both recipes require baking, but the macaroni and cheese recipe is faster to make.
To make a Tennessee meatloaf, combine 1 1/2 pounds of ground beef, 1/2 cup of fresh bread crumbs, 1 egg, 1 chopped onion and 1 teaspoon of salt, as well as 1/4 teaspoon of pepper and 8 ounces of tomato sauce. Form the mixture into a loaf, and place it in a baking pan. Mix 8 ounces of tomato sauce with 1/2 cup of water, 3 tablespoons of vinegar, 3 tablespoons of brown sugar, 2 tablespoons of mustard and 2 tablespoons of Worcestershire sauce. Pour the sauce over the loaf, and bake it at 350 degrees Fahrenheit for one hour and 15 minutes, basting occasionally.
To make macaroni and cheese, cook 2 cups of elbow macaroni according to the package instructions. Cook 1/4 cup of melted butter, 1/4 cup of flour, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, 1/4 teaspoon of ground mustard and 1/4 teaspoon of Worcestershire sauce over medium-low heat, stirring constantly. Once the mixture is smooth and bubbly, remove it from the heat, and stir in 2 cups of milk. Bring the mixture to a boil, stirring constantly, and cook it for one minute. Stir in 2 cups of Cheddar cheese, and cook until the cheese melts, stirring occasionally. Drain the macaroni, and fold it into the cheese sauce. Pour the mixture into a baking dish, and bake it uncovered at 350 degrees Fahrenheit for 20 to 25 minutes.
