Some good halibut marinades include lemon rosemary marinade, lemon and basil marinade, lemon-basil vinaigrette and lemon garlic marinade. To make a lemon garlic marinade, toss 1/4 cup of lemon juice, 1 tablespoon of vegetable oil, 1/4 teaspoon of salt, 1/4 teaspoon of pepper and 2 cloves of minced garlic in a bag with 4 halibut steaks. Chill the fish fillets for 10 minutes before grilling them at medium heat for 10 to 15 minutes, brushing them regularly with the marinade.
Make lemon rosemary grilled halibut by pouring 3 tablespoons of dry white wine, 3 tablespoons of fresh lemon juice and 3 tablespoons of olive oil in a baking dish. Season the mixture with 1 tablespoon of chopped fresh rosemary, and coat 4 6-ounce halibut steaks in the mixture. After refrigerating the fish for at least an hour, season the steaks with salt and pepper to taste, and grill them for four minutes per side.
To make the lemon-basil vinaigrette, whisk together 2 1/2 tablespoons of fresh lemon juice and 2 tablespoons of extra-virgin olive oil until emulsified, and then stir in 2 crushed garlic cloves, 1/2 teaspoon of grated lemon peel, 3 tablespoons of sliced fresh basil and 2 teaspoons of drained capers. Either soak the halibut in the mixture, or brush it on the steaks along with salt and pepper before grilling them.
