Some good habanero hot sauce recipes are Rick Bayless' habanero hot sauce and Pepper Joe's Island Hot Sauce. Andrea Lynn's mango habanero hot sauce is a sweet and spicy take on traditional habanero hot sauce.
Make Rick Bayless' habanero hot sauce by evenly roasting 5 cloves of garlic over medium heat for approximately 15 minutes until tender. Allow the garlic cloves to cool, and set them aside. Add 1/2 cup each of peeled and chopped carrot and white onion, 5 ounces of stemmed orange habanero chiles, and 1 cup each of apple cider vinegar and water to a small saucepan. Simmer the mixture over medium-low heat for approximately 10 minutes or until the carrots are tender. Pour into a blender adding the roasted garlic, 2 teaspoons of salt and 1/4 teaspoon of sugar, and blend until smooth.
Make Andrea Lynn's mango habanero hot sauce by adding 4 de-seeded and halved habaneros, 3 cloves of garlic, and 2 peeled and chopped medium carrots to a medium saucepan. Cover with water, and bring to a boil on high heat. Simmer for approximately 10 minutes or until the carrots are tender, transfer the solids to a food processor, and set the liquid aside. Add 1/4 cup of the cooking liquid, 1 tablespoon each cider vinegar and lemon juice, a diced mango and salt to taste, and puree until thoroughly blended.
