Taco salads, barbecue sloppy joes and chicken spinach pie are delicious recipes that use ground chicken. Make a quick taco salad by layering seasoned ground chicken, beans, lettuce, cheese and tomatoes over tortilla chips.
Make BBQ sloppy joes using ground chicken. In a nonstick pan, brown 1 pound ground chicken, 1 chopped onion and 1 chopped bell pepper until the chicken is cooked through. Drain, and add 3/4 cup barbecue sauce. Stir to combine, and cook until it is hot. Serve on toasted buns with lettuce and cheese.
For an elegant meal, make spinach and chicken pie. Preheat the oven to 375 degrees Fahrenheit, and grease a baking dish. Melt 2 tablespoons of butter in a skillet, and add 1 sliced onion. Cook over medium heat for five minutes. Add 2 1/4 pounds ground chicken to the pan, and cook for eight minutes more.
Add 3 10-ounce packages of frozen spinach to the pan. Season with 1 1/2 teaspoons salt, 1 teaspoon black pepper, 1/2 teaspoon nutmeg and 1/4 teaspoon chili flakes. Transfer to a medium bowl, and fold in 1 1/2 cups feta cheese, 4 lightly beaten eggs and 1 tablespoon fresh oregano.
Layer 7 half sheets of phyllo dough in the baking dish, spread the spinach chicken mixture over the top and layer with 8 half sheets of phyllo dough. Bake for 45 minutes.
