Good sauces for grilled chicken, according to Cooking Light magazine, include a white wine sauce made by simmering together white wine vinegar with other ingredients, such as chicken broth and butter. Another tasty sauce is a tangy mustard sauce which uses ingredients like maple syrup, garlic and Dijon mustard.

White Wine Sauce

This recipe can be thrown together quickly, using ingredients many people already have in their pantries. It yields 1/4 cup or 7 tablespoons.

  • Cooking spray
  • 1/2 cup fat-free, low sodium chicken or vegetable broth
  • 1/3 cup finely chopped onion
  • 1/4 cup dry white wine
  • 2 tablespoons white wine vinegar
  • 2 tablespoons butter
  • 2 teaspoons finely chopped fresh chives
  1. Heat a skillet over medium-high heat and coat the pan with cooking spray.
  2. Add the onion to the pan and cook for 2 minutes, stirring frequently.
  3. Stir in the broth, white wine and vinegar and bring the mixture to a boil.
  4. Cook until the sauce reduces to about 1/4, about 5 minutes.
  5. Remove from the heat and stir in the butter and chives. Add on top of cooked chicken.

Tangy mustard sauce is ready to serve in about 10 minutes and this recipe works well for pork as well as on chicken.

Yield: 1/4 cup


  • 2 teaspoons olive oil
  • 2 garlic cloves, minced
  • 1/4 cup dry white wine
  • 1/4 cup fat-free, low-sodium chicken broth
  • 2 tablespoons Dijon mustard
  • 2 tablespoons maple syrup
  • 3/4 cup fresh rosemary, chopped
  • 1/2 teaspoon freshly ground black pepper


  1. Heat a skillet over medium-high heat. Add the olive oil and garlic and saute for about 30 seconds, stirring constantly.

  2. Stir in the broth, wine maple syrup and mustard and bring the sauce to a boil.

  3. Stirring occasionally, cook the sauce until it reduces to 1/4 cup, about 5 minutes.

  4. Remove from the heat and stir in the black pepper and rosemary. Serve over cooked chicken or pork.
