To cook grilled catfish, gather the following ingredients: 5 juiced lemons, 1 tablespoon of sea salt, 3 large cloves of minced garlic and 2 8-ounce fillets of catfish. You will also need 1/4 cup of shredded carrots, 2 tablespoons of chopped parsley and 1 quartered lemon. For the dry ingredients, gather 2 tablespoons of lemon pepper seasoning, 2 tablespoons of garlic and herb seasoning blend, and 1 1/2 teaspoons of Creole seasoning.
Pour the lemon juice into a bowl, and whisk in the garlic and salt. Once the mixture is homogeneous, add in the catfish fillets, flipping them several times to cover, and marinate them in the fridge for up to four hours. While the fillets are marinating, preheat the oven's broiler to 400 degrees Fahrenheit, and prepare the oven rack at its lowest position.
After the fillets are done marinating, remove them from the bowl, and discard the marinade. Put the fillets onto a broiling pan, and sprinkle them with the dry seasonings. Broil the fillets until the fish flake easily, which should take approximately 15 minutes. Turning on the broiler at full for the last several minutes creates a blackened look on the surface of the fish. When ready, serve the fish with the parsley and carrots.
