Green tomato relish, fried green tomatoes and green tomato pie are three good green tomato recipes. These recipes use a variety of cooking methods, including frying, baking and boiling.
To make green tomato relish, simmer 1/2 cup plus 2 tablespoons of cider vinegar, 1/2 cup plus 2 tablespoons of light-brown sugar and 1/4 cup of water. Add 2 diced green tomatoes, 1/2 chopped onion, 1/2 cup of golden raisins, 1 teaspoon of mustard seed, 1 tablespoon of salt and 1/2 teaspoon of pepper. Bring to a rapid simmer and cook for 14 minutes.
To make fried green tomatoes, slice 2 pounds of green tomatoes into 1/2-inch slices and drain well. Beat 4 eggs and mix in 1 1/4 cups of cornmeal, 3/4 cup of water, 1/4 cup of minced chives, 1 tablespoon of salt and 1/4 teaspoon of pepper. Heat 1/4 cup of butter in a skillet until bubbly. Coat the tomato slices in the batter and quickly brown on both sides.
To make green tomato pie, combine 1 1/2 cups of sugar, 5 tablespoons of flour, 1 teaspoon of cinnamon and a pinch of salt. Add 2 cups of sliced green tomatoes and 1 tablespoon of cider vinegar. Toss to coat and pour into a pie crust. Dot with 1 tablespoon of butter and top with a lattice crust. Bake at 350 degrees F for one hour and let cool to room temperature.
