Some of the vital ingredients for the salad include 1 medium ripe tomato, 1 beef tomato, 1/2 pound ripe cherry tomatoes, 1 cucumber, 1 green pepper and 1 medium red onion, peeled. Other additional ingredients are 1 tablespoon sea salt, 3 tablespoons of Greek extra virgin oil, 1 tablespoon dried oregano, 1 handful fresh mint leaves and 1 handful black olives.
To make different shapes in the salad, cut the medium tomato into wedges, the cherry tomatoes into halves, and the beef tomato into thin rounds. Slice the onion into thin slices, and put it together with the tomatoes in a large sauce bowl. Using a fork, scratch the cucumber so that it has deep grooves on its sides, then cut it into thick slices. Deseed the pepper, cut it into thin circles, and add it to the sauce bowl.
Chop the dill and the mint leaves roughly, but reserve the finer ones for the garnish. Add the chopped leaves into the sauce bowl. Squeeze the olives over the salad to season the vegetables, and drop them in the sauce bowl. Add vinegar, a pinch of salt, and the extra virgin oil, and toss the mixture with your hands. Taste the salad, and adjust the flavors accordingly.
