A good granola recipe comes from Alton Brown of the Food Network and calls for oats, nuts, coconut and sugar to be toasted and then mixed with raisins for a variety of flavors and textures. The recipe has received many positive reviews from home cooks.
Preheat the oven to 250 degrees Fahrenheit. In a large bowl, mix 1 cup of cashews, 1 cup of slivered almonds, 3 cups of rolled oats, 3/4 cup of shredded sweet coconut and 1/4 cup plus 2 tablespoons of brown sugar. In another bowl, combine 1/4 cup plus 2 tablespoons of maple syrup, 1/4 cup of vegetable oil and 3/4 teaspoon of salt. Combine the two mixtures into one, and pour it onto two sheet pans.
Cook for one hour and 15 minutes, stirring every 15 minutes for even cooking. Remove the mixture to a bowl, and add 1 cup of raisins. Toss and serve the mixture, or store it. Customize this recipe using any combination of fruits, nuts and seasonings. Pumpkin seeds, dried fruits and grains such as puffed rice work well as granola ingredients. Use honey or coconut milk for a stickier, more dessert-like treat. To tone down the sweetness, use more coconut in place of the brown sugar, and add an extra pinch of kosher salt to the mix.
