To make graham crackers, combine 8 3/8 ounces of graham flour, 1 7/8 ounces of all-purpose flour, 3 ounces of dark brown sugar, 3/4 teaspoon of baking powder and 1/2 teaspoon of baking soda in a food processor. Add 1/2 teaspoon of kosher salt and 1/8 teaspoon of ground cinnamon. Blend everything together, then gradually add 3 ounces of unsalted butter until the mixture is crumbly. Mix in 2 1/4 ounces of molasses, 1 1/2 ounces of whole milk and 1/2 teaspoon of vanilla extract. Press the dough into a flat disk, and refrigerate before baking into graham crackers.
Graham crackers can be used in many dishes. For instance, grinding the crackers into crumbs and adding 4 cups of crumbs to 12 tablespoons of melted butter, 1/2 cup of sugar and 1/4 teaspoon of salt creates a cheesecake crust. Mix the ingredients together, and press the mixture into the bottom of a spring form pan.
