Some good gourmet cake recipes include inside-out German chocolate cake, pound cake with blueberries and lavender syrup, and mascarpone-filled cake with sherried berries. Another top recipe is chocolate ganache cake.
The chocolate ganache cake is a fairly simple gourmet layer cake. First, make the cake batter by stirring 1/2 cup cocoa powder and 1 teaspoon instant-espresso powder into 3/4 cup of boiling water. Once the batter is smooth, add 1/2 cup of whole milk and 1 teaspoon of vanilla. In a separate bowl, beat 2 cups of dark brown sugar and 1 cup of softened unsalted butter together, adding the 4 eggs one at a time. Sift 2 cups of flour, 1/4 teaspoon salt and 1 1/4 teaspoon baking soda into a bowl.
Gradually mix the cocoa syrup and flour into the brown sugar mixture until everything is combined. Pour the batter into three round cake pans, and bake at 350 degrees Fahrenheit for 20 to 35 minutes. In a small saucepan, add 2 1/2 cups of heavy cream, and bring to a simmer. Mix in 20 ounces of bittersweet chocolate until melted.
Spread some over the ganache on one layer of the cake, and place the second layer on top of it. Add more ganache on top of the second layer, and top with the third cake layer. Spread the rest of the ganache over the top and sides of the cake. Chill the cake so that the ganache sets up before serving.
