A good gluten-free banana nut bread recipe substitutes either gluten-free all-purpose flour or almond flour for regular flour. The recipes include eggs, ripe bananas, applesauce, sugar and chopped walnuts.
Make good gluten-free banana nut bread by first mixing together 2 cups of gluten-free flour, 1/4 teaspoon salt and 1 teaspoon baking soda. In another bowl, mash up 4 or 5 bananas, then stir in 1 cup sugar, 1/2 cup of unsweetened applesauce, 1 teaspoon vanilla extract and 1/3 cup of canola oil. Whisk in 4 eggs. Gradually combine the banana mixture into the flour mixture, then pour the batter into two loaf pans. Spread the walnuts on top of the batter, then bake between 45 and 55 minutes at 350 degrees.
Make almond flour banana bread by sifting together 3 cups of almond flour, 3/4 teaspoon of baking powder, 1 teaspoon of ground cinnamon, 1/2 teaspoon ground nutmeg and 1/2 teaspoon salt. In another bowl, combine 3 eggs and 1 tablespoon of apple cider vinegar. Beat in 3 mashed bananas, 1/4 cup of softened coconut oil, 1/4 cup of honey and 1 teaspoon of vanilla extract. Stir the sifted mixture into the egg mixture and add nuts if desired. Pour the batter into bread pans and cook for 60 minutes at 300 degrees.
