Strawberry Jell-O pretzel squares from Jello.com and cinnamon gelatin salad from TasteOfHome.com are both good gelatin dessert recipes. Both recipes are simple and easy to make.
To make strawberry Jell-O pretzel squares, mix 2 cups of finely crushed pretzels with 1/4 cup of sugar and 2/3 cup of melted butter or margarine. Press the mixture into the bottom of a 13-by-9-inch pan, bake for 10 minutes in the oven, and allow to cool.
Beat 1 1/2 8-ounce packages of softened cream cheese with 2 tablespoons milk until blended. Stir in 1 cup of whipped topping. Spread the mixture over the crust. Refrigerate the dish.
In a large bowl, add 1 6-ounce package of strawberry gelatin to 2 cups boiling water, stirring until dissolved. Add 1 1/2 cups cold water, and stir. Fold in 4 cups sliced fresh strawberries. Spoon the strawberry mixture over the cream cheese mixture, and refrigerate the dish for three hours or until firm.
To make the cinnamon gelatin salad, cook 1/4 cup Red Hot cinnamon candies with 1/4 cup water in a saucepan until the candies melt. Dissolve 1 6-ounce package of cherry or raspberry gelatin in 1 3/4 cups of boiling water. Stir in the candy mixture and 1 3/4 cups cold water. Cover the dish, and refrigerate it until it is partially set. Fold in 1 medium peeled and chopped tart apple and 1/4 cup chopped pecans. Pour the mixture into a 1 1/2-quart serving bowl, and refrigerate it until set.
