To make frozen blueberry pie, combine 10 ounces of mashed blueberries, 4 ounces of sugar, 1/8 teaspoon of kosher salt and 1 1/4 ounces of tapioca flour in a bowl, and then add 1 tablespoon of fresh orange juice and 1 teaspoon of orange zest. After 15 minutes, stir in 10 ounces of whole blueberries. Freeze the blueberry filling for at least six hours, and then place it in a store-bought pie crust. Cut another pie shell into strips, and layer them on top of the blueberry filling in a lattice pattern. Brush the crust with 1 egg yolk whisked with 1 teaspoon of water before baking the pie at 325 degrees Fahrenheit for 75 minutes.
Make no-bake frozen blueberry pie by combining 1 1/2 cups of graham cracker crumbs with 1/4 cup of sugar and 1/4 cup of melted butter in a food processor and pressing the graham cracker mixture into a springform pan. While the crust cools in the refrigerator, blend 3 cups of fresh blueberries, 2/3 cup of granulated sugar and 1/2 cup of plain yogurt in the food processor, and beat 8 ounces of cream cheese and 1 cup of plain yogurt with 1/2 cup of powdered sugar and 1 teaspoon of vanilla extract. In another bowl, beat 1/2 cup of heavy cream into stiff peaks. Fold together the blueberry and cream cheese mixture, and then stir in the whipped cream. Spoon the filling into the chilled pie crust, and freeze the pie for four hours before serving.
