Make Jell-O frosting by whipping one box of any flavor Jell-O, 2/3 cup of sugar, an egg white and 1 teaspoon of vanilla with 1/2 cup of boiling water. Whip the mixture on high for five minutes. This makes enough frosting to frost one 9-inch by 13-inch sheet cake.
Do not make this Jell-O using sugar-free Jell-O or Jell-O pudding. The frosting comes out lighter in color and flavor than traditionally prepared Jell-O. Jell-O frosting is best eaten on the day when you have prepared it. If you this recipe for a frosting for cupcakes, do not let the cupcakes touch, as the frosting will stick and break off.
Jell-O brand gelatin is packaged in 3-ounce packages. If substituting a different brand for Jell-O, use 3 ounces in the recipe.
The frosting has a fluffy and light marshmallow quality, and you can spread or pipe the frosting onto the cake. The color of the frosting is pale or pastel. To darken the color, you can add a food coloring gel before whipping the ingredients together. Due to the long mixing time, you may have better results if you whip the frosting for five to 10 minutes on high in a stand mixer over using a handheld mixer or whisk.
