Both Food Network and Rachael Ray have recipes for fried cod that have high ratings. Both of these recipes are easy, ready in about 30 minutes or less and make four servings.
To make the Food Network fried cod with slaw, start by preparing the slaw. Mix 1/2 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 1 tablespoon each of mustard and sugar and about 1/4 teaspoon of caraway seeds. Also add 1 1/2 teaspoons of salt and pepper to taste. Mix this with 1/2 head of cabbage, 1 small shredded carrot, 1 julienned gala apple and 1 bunch of chopped scallions.
To prepare the fish, whisk an egg and 1/2 cup of milk together, add four cod fillets, and allow them to soak. Mix 1/3 cup of flour, 1/3 cup of cracker meal, 1/4 teaspoon of cayenne and a pinch of salt. Dredge the cod in the flour mixture, pan fry, and serve with the slaw.
To prepare Rachael Ray's version, take four cod fillets, and season them with pepper and salt. Take three pie tins, and place a couple of scoops of flour in one, two eggs mixed with 2 tablespoons of water in the second and 2 cups of plain breadcrumbs, 1/2 teaspoon of dried mustard and 1/4 teaspoon of cayenne in the third.
Pour 2 inches of vegetable oil into a large skillet. Place skillet over large burner, and heat oil over medium-high heat. To check if the oil is hot enough, drop in a 1-inch cube of white bread. The bread should brown by the time you count to 40. Coat each fish fillet in flour, egg and breadcrumbs, then fry until golden.
