A good French recipe for chicken is country French chicken and rice, which is made by marinating chicken and mushrooms for at least two hours and then baking it in the oven for up to an hour. Other French recipes include chicken cordon bleu and chicken Francese.
To make country French chicken and rice, combine 1/4 cup of chopped sun-dried tomatoes, 2 tablespoons of herbes de Provence, 2 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 tablespoon of chopped garlic and 1/2 teaspoon of salt into a resealable bag. Add 2 pounds of cut chicken pieces and 1 1/2 cups of sliced mushrooms to the bag. Turn chicken to coat with marinade. Refrigerate for at least two hours.
Preheat the oven to 375 degrees Fahrenheit. Spray a baking pan with cooking spray, and add 1 cup of uncooked long-grain white rice, 3/4 cup of shredded carrot and 1/2 teaspoon of salt to the baking dish. Add 2 cups of boiling water, and place the chicken and mushrooms in the baking dish. Pour the marinade over the dish, cover with foil and bake for 50 to 60 minutes or until the liquid is absorbed and the chicken is fully cooked. Sprinkle the top with 1 tablespoon of fresh parsley and 2 teaspoons of grated lemon peel, if desired.
