About.com’s Five Minute Chocolate Fudge recipe combines 2 tablespoons of butter, 2/3 cup of evaporated milk, 1 2/3 cups of sugar and 1/2 teaspoon of salt. Mix the ingredients in a saucepan, and cook them over medium heat.
Bring the mixture to a boil, and cook it for four to five minutes, stirring constantly. Remove the mixture from heat, and stir in 2 cups of miniature marshmallows, 1 1/2 cups of semisweet chocolate chips, 1 teaspoon of vanilla and 1/2 cup of chopped pecans or walnuts. Beat the ingredients for 1 minute or until the marshmallows melt and the mixture is thoroughly mixed. Pour the mixture into a buttered 8-inch square pan, and let it cool. Cut the fudge into squares.
Another good five-minute fudge recipe is the Better Homes and Gardens Fabulous Five-Minute Fudge. For this recipe, line a cookie sheet with wax paper, and combine 1 12-ounce package of semisweet chocolate pieces, 2/3 cup of sweetened condensed milk and 1 tablespoon of water in a medium microwave-safe bowl. Microwave the mixture uncovered for 1 minute on high, and then stir it. Microwave the mixture for another minute, stirring every 30 seconds. Stir in 3/4 cup of chopped walnuts and 1 teaspoon of vanilla. Pour the mixture onto the prepared cookie sheet, spreading it into a 9- by 6-inch rectangle. Chill the fudge for 30 minutes until firm, and cut it into 1.5-inch squares.
