In addition to simply sprinkling with sugar or filling with fresh fruit and whipped cream, you can fill dessert crepes with jam or specialty fillings such as sweetened Marscarpone cheese mixed with coffee liquor and vanilla to make tiramisu-inspired crepes. Top the crepes with chocolate sauce and a whipped cream.
Other filling ideas include using stewed fruits such as strawberries and rhubarb, sliced bananas with hazelnut spread, sweetened yogurt, chocolate ganache, your favorite mousse, lemon curd or a sweet mixture of softened cream cheese, caramel ice cream topping and whipped topping. For a lighter dessert, try filling crepes with homemade fruit salsa. You can use any of your favorite fruits. For example, combine 2 diced apples with 1 pint of diced strawberries, 2 diced peaches, 2 diced kiwi and 2/3 cup of apple butter.
To make dessert crepes, add a little sugar to the crepe batter before cooking the crepes. The slight sweetness adds to the flavor of the dessert dish and complements whatever filling you choose to use. Use toppings that complement the filling. For example, if you fill the crepes with fresh fruit or fruit salsa, try a little whipped cream and citrus zest, or a drizzle of salted caramel sauce.
