Panlasang Pinoy offers a recipe for Filipino chicken adobo on PanlasangPinoy.com. The recipe calls for chicken, bay leaves, soy sauce, vinegar, garlic and sugar. The chicken is marinated in soy sauce and garlic, then cooked with the marinade, vinegar, bay leaf and whole peppercorn before finishing with sugar and salt.
Cut 2 pounds of chicken into serving pieces. Set the chicken pieces in a large sealable container with 4 tablespoons of soy sauce and 3 crushed cloves of garlic. Allow the chicken to marinate for one to three hours.
Add 1/4 cup of cooking oil to a pan and apply heat. When the oil is hot and shimmering, place the marinated chicken in the pan, reserving the marinade. Brown the chicken on all sides for about five minutes, then pour in the reserved marinade, add 1 to 2 cups of water and bring to a boil. Add 3 dried bay leaves and whole peppercorn to the pan and continue to simmer for about 30 minutes.
After the chicken is cooked and tender, add 2 tablespoons of vinegar and stir. Cook for 10 more minutes, then add 1/2 tablespoon of white sugar and salt to taste. Stir and remove from heat. Serve the chicken adobo hot.
