Some good figgy pudding recipes are provided by About.com and AllRecipes.com. Some of the ingredients for About.com's recipe are butter, eggs, molasses, dried figs, lemon peel and buttermilk. The rest of the baking ingredients for the pudding are walnuts, flour, baking soda and powder, salt, ground cinnamon and ground nutmeg.
Use an electric mixer to cream 1/2 cup of the butter. Add two eggs and 1 cup of molasses to the mixing bowl and blend the ingredients together. Incorporate 2 cups of stemless dried chopped figs, 1/2 teaspoon of grated lemon peel, 1 cup of buttermilk and 1/2 cup of chopped walnuts into the butter and egg mixture. Add to the bowl 2 1/2 cups of flour, 1/2 teaspoon of baking soda, 2 teaspoons of baking powder, 1 teaspoon of salt, 1/2 teaspoon of ground cinnamon and 1/4 teaspoon of ground nutmeg. Mix all of the ingredients together.
Grease the bottom and sides of a 8 by 4 inch soufflé dish. Sprinkle a small amount of flour onto the bottom of the dish as well. Pour the figgy pudding batter into the dish. Bake the figgy pudding for one hour at 325 degrees Fahrenheit. Insert a wooden toothpick into the middle of the pudding. If the toothpick comes out clean, then the pudding is finished baking.
