Reduce the heat to low, and add your choice of halibut or trout, 2 pounds. Poach the fish for three to four minutes. Add 2 cups bok choy stems, 1/2 teaspoon of salt and 1/2 teaspoon of pepper. Cook for one minute, and add the bok choy leaves and 1 cup of chopped green onion to the pot, cooking for 30 additional seconds.
