Enstrom Almond Toffee Cheesecake
Impress family and friends with a rich toffee cheesecake for dessert. This recipe takes a couple of hours, so start well ahead of a special dinner.
- 3 1/2 cups crushed vanilla wafers
- 1/2 stick butter
- 2 1/2 cups crushed Enstrom's Almond Toffee
- 16 ounces regular cream cheese
- 2 cups granulated sugar
- 3 teaspoons ground cinnamon
- 5 teaspoons all purpose flour
- 8 eggs
- 3/4 cup heavy cream
- 1 1/2 teaspoons almond extract
- 1 1/2 teaspoons vanilla extract
- 3/4 cup sour cream
- Prepare the crust
- Mix filling ingredients
- Place in pan
Melt the butter and stir in the vanilla wafers. When the mixture holds together, press into a springform cheesecake pan. Toast in the oven at 350 degrees Fahrenheit until slightly brown.
Mix together the cream cheese, sugar, cinnamon and flour for 3 to 5 minutes. It should have a light and fluffy consistency. One at a time, beat in six eggs and two egg yolks. Slowly, beat in the sour cream, heavy cream and extracts.
Mix a small amount of the toffee into the cheesecake. Pour the mixture into the springform pan. Place it in a water bath. Sprinkle two cups of toffee on top.
Place in the oven and bake for 1 hour and 20 minutes. Remove and sprinkle remaining toffee on top. Serve chilled.
