To make ensaymadas, you need 4 1/2 cups of flour, 1 tablespoon of dry yeast, 3/4 cups of water, 4 beaten eggs and 3/4 cups of sugar. In addition, you need 1/4 cup of milk, 1/2 cup of butter and 1/2 cup of vegetable oil. Flour is needed dusting, shortening for greasing, and softened butter, sugar and 2 cups of grated cheese are required as toppings.
Dissolve the yeast in warm water, and then add 1 cup of flour and 1 tablespoon of sugar. Set the mixture aside for two hours until it doubles. Transfer the mixture to a mixing bowl and add the milk, butter, sugar and eggs and the remaining flour. Add a little bit of oil at a time until the dough is no longer sticky, and knead until it is smooth and elastic, which takes about 15 minutes.
Set this aside in a bowl, and cover the bowl with plastic to refrigerate for 4 hours or overnight. When ready, remove the dough, and let it reach room temperature. Grease and flour your pan, and then divide the dough into 12 pieces, flattening each piece to make a rectangle.
Coil the dough and set the pieces on a pan. Place them inside an oven with a point of boiling water underneath to help the dough rise. After an hour, remove the container, and bake the ensaymada at 350 degrees Fahrenheit for 25 minutes. Cool completely, and add the butter, sugar and cheese toppings.
