Start by preheating an oven to 350 degrees Fahrenheit. In a medium bowl, combine 2 cups cooked shredded chicken, 1 can cream of chicken soup, 1 cup sour cream, 4 ounces grated cheddar cheese and 1 can tomatoes with green chilies. Stir in 1 teaspoon each of cumin and chili powder. Crush 11 ounces Nacho Cheese Doritos, and spread half of them across the bottom of a 9 x 13-inch baking dish. Add the chicken mixture, then top with the rest of the Doritos. Sprinkle the remaining cheddar cheese over the top and bake for twenty minutes. Serve hot, topped with 1/2 cup pico de gallo.
You can substitute homemade soup for canned soup. To make it, melt 3 tablespoons butter in a small saucepan over medium-low heat. Once melted, whisk in 1 tablespoon flour. Keep mixing vigorously until smooth, then remove from heat and whisk in 1/2 cup chicken broth and 1/2 cup milk.
