A dinner recipe that uses Cheez-Its is Three Cheese Mac with Cheez-It Herb Crumb Crust. The Cheez-Its are pulsed in a food processor with chives and parsley, then used as a topping for pasta with creamy Monterey Jack, fontina and goat's cheese sauce. This is toasted under a broiler and served.
Three Cheese Mac with Cheez-It Herb Crumb Crust

- 1 pound penne pasta
- 1/2 box Cheez-It crackers
- 1 bunch fresh chives, chopped
- 1 bunch fresh flat-leaf parsley, chopped
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 2 tablespoons grated aged Monterey Jack cheese
- 1/4 cup fontina cheese
- 2 tablespoons crumbled soft goat's cheese
- 2 cups heavy cream
- Freshly ground black pepper
- Cook pasta
- Prepare sauce and topping
Set oven to broil. Meanwhile, boil a pot of salted water on the stove and add pasta, cooking for between 8 and 10 minutes.
Prepare the topping by pulsing the Cheez-It crackers in a food processor until coarse, then adding the chopped herbs. To make the sauce, place the butter and flour in a saucepan and whisk together over medium-high heat until combined and bubbling. Continuing to whisk, add the milk and simmer. Gradually incorporate the cheeses to the mixture, then add the heavy cream, salt and pepper.
Strain the pasta and combine with the sauce, then transfer the pasta and sauce to oven-proof bowls. Top with the herbs and broken Cheez-Its and broil for up to 5 minutes, or until toasted but not burnt.
