There are many recipes that can be made in a mini slow cooker, but a pot roast for two is simple to prepare and works well for small slow cookers. The ingredients required for the recipe are beef chuck roast, red potatoes, baby carrots, onion and powdered onion soup mix.
Chop three small red potatoes into cubes, and place them in the bottom of the slow cooker. Cut 15 baby carrots in half, and add them to the slow cooker with the potatoes. Place the beef chuck roast on top of the carrots and potatoes. Slice a small onion or half of a medium onion into rings, and layer them on top of the roast.
Sprinkle half of a packet of powdered onion soup mix into a bowl, and gradually add just enough water to make a creamy paste. Whisk the paste thoroughly to remove all lumps. Use a barbecue brush, if available, to spread the paste over the onions and the roast, and then put the lid on the slow cooker. Set the slow cooker on low heat, and allow the roast to cook for eight hours. When the internal temperature of the meat is at least 165 degrees Fahrenheit, it is ready to serve.
