Classic Deviled Eggs

- 6 eggs
- 1/4 cup mayonnaise
- 1 tsp. yellow mustard
- 1/8 tsp. salt
- 1 tsp. white vinegar
- ground pepper
- smoked Spanish paprika
- Place the eggs in a saucepan in a single layer and cover them so that 1 1/2 inches of water is over the eggs. Heat on high and bring to a boil. Lower the heat, cover the pan and let the eggs cook for 1 minute. Remove from the heat and leave covered for 14 minutes, and then rinse the eggs for 1 minute under cold water.
- Crack the shells and peel the eggs under running cold water. Dry the eggs with paper towels, and cut them lengthwise. Remove the yolks to a bowl and place the eggs on a plate.
- Mash the yolks into a fine crumble, and add the rest of the ingredients, except the paprika. Mix well.
- Evenly place the yolk mixture into the egg whites. Sprinkle with paprika before serving.
