Salted caramel chocolate cookies from Kraft make a good dessert using caramel bits. Combine 1 cup of butter with 1 1/2 cups of white sugar, 2 eggs, 2 teaspoons of vanilla, 2 cups of flour and 2/3 cup of cocoa powder, as well as 3/4 teaspoon of baking soda, 1/2 teaspoon of salt, 11 ounces of caramel bits and 1 cup of dark chocolate chips. Bake the dough for eight to 10 minutes at 350 F.
Alternatively, make chocolate caramel cookie bars using caramel bits. Line a baking pan with aluminum foil so that the ends of the foil extend over the sides of the pan. Spray the pan with cooking spray, and arrange 35 square shortbread cookies in a single layer in the pan. Microwave 11 ounces of caramel bits and 1 tablespoon of milk on high for 90 to 120 seconds until the bits are melted, stirring after each minute. Pour the caramel mixture over the cookies, and spread it to completely cover them.
Microwave 3 ounces of semi-sweet chocolate and 3 ounces of white chocolate for two minutes until the chocolates are almost melted, stirring every 30 seconds. Stir the chocolates to completely combine them, and pour the mixture over the caramel layer. Let the cookies stand for two hours to cool, and cut them into bars.
